High fiber Rice Crepes

I finally, after a lot of experiments, stumbled upon a recipe for Dosa (rice crepes) that’s healthy and good to eat. For a primer on Dosa, follow here. Here I’ve made more nutritious and this one has more fiber too than the traditional Dosa. I’ll let the pictures do the talking.

1> Soak 2(brown rice): 1 (whole black urad) overnight. For the uninitiated to Indian pulses. Black urad can be bought over Amazon, something like here.

Whole brown rice

Soak overnight

Grind it down to a pancake batter like consistency in a blender and add salt as per taste.
Let the batter sit-out at room temperature for about 36 hours (less if you live in a warm place)
The batter will leaven as above (those are CO2 bubbles)

Make a crepe like below

Top it up with egg or meat.
